Garlic Parmesan Roasted Shrimp

Um, the title of this post speaks for itself.  All my favorite tastes wrapped up into one dish….garlic, parm and shrimp.  Whoop, whoop….let’s eat!  I found this goodie, Garlic Parmesan Roasted Shrimp at one of my favorite food blogs, Damn Delicious. Her food pics will make your mouth water and her recipes are easy to follow that I even surprise myself when I try to whip some of these yummies.  Please believe me when I say that I am not much of a cook but if a dish only requires  a handful of ingredients I will definitely try my hand at it.  When I read this recipe prep time was 5 minutes, cook time 10 minutes making it a total time of 15 minutes….count me in!

Here is what I tried to put together using the ingredients I already had at home.  Some ingredients I omitted because I didn’t have in my pantry but I mostly followed her instructions.  Here it goes…

Shrimp, Olive oil, S&P, Oregano & Basil…whoa where is the Garlic & Parm?

Sorry about that…Minced Garlic & Grated Parm. Didn’t have the fresh stuff on hand but it still turned out good.


Garlic Parmesan Roasted Shrimp


~ 2lb. bag of frozen raw, headless, tail on, shell on shrimp  (Of course, I had to thaw, de-vein & shell those bad boys…mercy!)

~2 tablespoons of olive oil

~1 tablespoon of minced garlic

~1/2 teaspoon of dried oregano

~1/2 teaspoon of dried basil

~1/4 cup grated Parmesan

~Kosher Salt & Black Pepper to taste

I mixed all the ingredients together and gently tossed with the shrimp. The Damn Delicious recipe calls for a 1 pound bag of shrimp but surprisingly there was enough marinade for 2 lbs.  I decided to marinate the shrimp in the sauce overnight just to let it soak in the garlicky goodness.  The original recipe did not call for this but thought I would try i see if it would come out even more flavorful.  The next day I preheated the oven to 400 degrees & sprayed a baking sheet with cooking spray.  I placed the marinated shrimp on the baking sheet &  I cooked those bad boys for about 8 minutes until they were nice shade of pink.

Alongside the shrimp I added a Baby Kale & Romaine salad and then whipped up my families favorite cheddar & garlic biscuits.  Um, not homemade but made in my home from the box….”Red Lobster Cheddar Bay Biscuits.” Yup, just like the ones they serve you at Red Lobster…… you know you love their biscuits!  🙂  Tasty & a little bit sinful at the same time.

My kiddos favorite biscuits. Wish I could say I made them from scratch but the box will have to do. 🙂

I am no pro in the kitchen but this dish will make you feel like you are.  I would definitely serve this one up to friends and family for a special treat or just because we are “huuunnngry”.  Check out the original recipe on Damn Delicious and the other goodies she has waiting.
